There’s something about brunches that make them so easy to mix up. I tend to start with these basic ingredients; eggs, bacon, mushrooms, sausages, avocado, tomatoes. Adding a bit of something different and you can transform a dish. Chorizo is a great example as it’s smokey and spicy flavour is soaked up beautifully by eggs. The trouble is the staggering amount of saturated fat you get in a stick of chorizo. It’s actually very easy to re-enact that flavour with some chilli oil and paprika instead. Especially when you’re getting the delicious salty taste from some bacon medallions. Enter my chilli scrambled egg and guac stack. It’s no secret that I love throwing a bit of spice in most of my dishes and brunch is no exception.
Crumpets are also making a comeback in my life. I used to love a buttered crumpet as a kid, their crispy but squidgy nature is right up my street. Especially when the flavours of guacamole and smokey scrambled eggs are seeping into them. My mouth is watering thinking about it… Yes, a couple of crumpets is quite high on the simple carbs front, but when you’re having this sort of thing once a week, it’s actually a very healthy treat. So get your crumpets in the toaster, smash some avo, grab some chilli oil and scramble some eggs!
